Sabudana kheer is a gourmet dessert. Kheer is lightly flavored with cardamom and saffron. This is easy recipe to make.
Recipe will serve 4
Ingredients
1/3 cup tapioca (sabudana, sago)
3 cups milk
3 tablespoons sugar
1 tablespoon sliced pistachios
Few strands of saffron
1/4  teaspoon cardamom powder

Method
Wash and soak the tapioca in about 1/3 cups of water for at least two hour, Sabudana will soak up most of the water and become light and fluffy.
Boil the milk in heavy bottom pan after milk comes to boil let it boil for about another 8 to 10 minutes making sure stirring occasionally so milk does not burn in bottom of the pan.
Add the tapioca cook until tapioca is soft and has become translucent this should take about 4 minutes.
Next add sugar, cardamom, pistachios, and saffron and boil for 2 to 3 minutes. Turn off the heat. As kheer will cool become little thicker in consistency.
Kheer can be served chilled or warm.

Shahi Toast is rich bread pudding. Toasted bread covered with creamy milk known as Malai. This is delicious and easy recipe to make.
Recipe will serve 2.
Ingredints:
3 slices of firm white bread
1-1/2 tablespoons unsalted melted butter or ghee
2 cups milk
2 tablespoons sugar
4 Green Cardamoms – shelled and the seeds crushed
1 tablespoon sliced almonds
1 tablespoon sliced pistachios

Method
Remove the crust from all sides of bread and butter the bread slices from both sides generously. Cut the slices in two.
Toast the bread from both sides on the skillet over medium heat until bread is toasted on both sides golden brown and crispy. Set aside.
In a heavy bottom pan boil milk over medium high heat until the milk reduces to about 1cup. After milk comes to boil  this should take about 20 minutes. Wet the pan and have few spoons of water before putting the milk in pan, this will reduces the chances of milk to burn. Make sure frequently stir the milk and scrapes the sides.
 Add sugar cardamom powder, half the almonds and half the pistachios. Boil for about 3 more minutes, stirring occasionally. Turn off the heat.
Assembling Shahi Toast: In serving plate arrange the bread slices; pour the milk over bread covering all sides. Notes: you may prepare the toast and milk in advance but assemble just before serving otherwise toast will become very soft.
Next garnish with remaining nuts.
Shahi Toast is ready to serve! It can be serve for breakfast or as a dessert. Any way you serve it will taste fabulous.

Shrikhand is a classic dessert of Western India. Plain yogurt is transformed into an aromatic delicacy flavored with saffron and cardamom.
Recipe will serve 4.
Ingredients
4 cups of yogurt
¾ cup of sugar as needed
Few strands of saffron
1 tablespoon warm milk
About ¼ teaspoon crushed cardamom
1 tablespoon sliced almonds
1 tablespoon sliced pistachios

Method
Drain the yogurt – Put a muslin or cheese cloth over a strainer. Now pour the yogurt over muslin cloth to drain. Place a bowl underneath the strainer to collect the excess water.
Next gently squeeze the excess water from yogurt. Make sure not to squeeze out the yogurt.
Move the yogurt with strainer and bowl into the refrigerator for at least six hours to drain excess water.
Yogurt will become thick in consistency.
Dissolve the saffron in warm milk. Milk will take on the saffron color, yellowish orange.
Add sugar, cardamom powder, and saffron milk to yogurt and beat well till sugar dissolves. You may use a mixer.
Mix in most of the almonds and pistachios to the yogurt mix and the remaining nuts will be used for garnish.
Chill the shrikhand before serving.
Traditionally shrikhand is served with puri (fried flat bread).
